Tomatoes are also low in Glycemic Index and rich in a plethora of vitamins and minerals.<\/p>\n<p>Ways to consume tomatoes for maximum benefit<br \/>\n\u2022 It would be better to consume tomatoes whole without peeling the outer layer. Because of its low glycemic index, it is considered a glucose-friendly fruit. Moreover, tomatoes are rich in folate, vitamins A, C, and other minerals.
